Environmental Assessment Training Series 101 (CDC)

The Centers for Disease Control and Prevention (CDC) has developed a comprehensive environmental assessment training that addresses all the tier one environmental health competencies. This training serves as the cornerstone that integrates all the information you have learned thus far in the Food Safety Centers of Excellence (CoE) Environmental Health Tier 1 Core Curriculum.

Description and objectives

The goal of this training is to set a foundation of skills needed for conducting an environmental assessment in an isolated food service setting. This training teaches how to use critical thinking, interviewing, sampling, and observation to identify an outbreak’s contributing factors and properly gather data to support the National Environmental Assessment Reporting System (NEARS).

At the conclusion of the training, learners will be able to:

  • Identify the 5 internal variables that influence food safety.
  • Identify the 5 stages in conducting an environmental assessment site visit.
  • Apply critical thinking skills to identify ways to remediate food safety problems in the presented scenario.
  • Describe 3 ways that this educational activity will improve contribution as a team member.
